Lara once again mentioned a school that she has in mind; as she also said in another recent interview, it would not be for ‘candidates in danger’ (as in Star Academie), but ‘people in danger’ – those undergoing troubles/traumas in their lives, for whom learning to sing would allow them to access and express their feelings. In other words, singing as a form of therapy, for non-professionals. This is an evolution of her ideas about her school – now that the Star Academie is fulfilling her original idea of a school that includes all aspects of singing, i.e., for life as a professional.
And speaking of which… the Star Academie Episode #5 was broadcast this past Sunday, and Lara introduced it with what appears to be a unique location for her photo:

“Star Académie”: a comforting Variety
There was only beauty in the Variété de Star Académie this Sunday evening, which notably received Mitsou, Simple Plan and the Frenchwoman Yseult. At the end of this comforting evening, Mathieu left the adventure with serenity.
On the eve of its twentieth career anniversary, the Simple Plan formation opened the evening with a medley of its greatest hits in the company of the Academicians. “Jet Lag” with Audrey-Louise was successful, Édouard distinguished himself on “Welcome To My Life”, Krystel provided voice on “The Antidote” and Olivier was perfect on “I'm Just A Kid” , the very first single from the band's debut album, released in 2002.
In danger
Édouard Lagacé seemed in full possession of his faculties during his performance on the song “High Hopes”, by Kodaline. He even hinted at his emotion. "I wanted to thank you for taking this risk of going beyond this area that you were hiding from us," congratulated Lara Fabian.
With "Je suis venu te dire que je m’en vais", Mathieu had the mission to manage his anxieties and his questions. He was relatively solid during his performance, which delighted Gregory Charles: “In a few days, and under these circumstances, you managed to give your best performance. Imagine how far you can go...”
For his part, Olivier certainly offered his best performance since the start of the season, interpreting "À hauteur d'homme", by Vincent Vallières. The voice was on point, the attitude felt, and it felt like he was actually living the lyrics.
“I have the impression that you showed us your story", Marc Dupré told him. "And we all believed it." Guylaine added in the compliments: "My beautiful Olivier, you have reached the height of a man, and not nearly".
Number One
First guest artistic director, Mitsou had imagined a number with several very different paintings.
Camélia opened on the song “La corrida”, with four drags behind in boxes. The three guys in danger then had fun with “Les Chinois”.
Audrey-Louise rolled her hips to “Bye bye mon cowboy”, before being joined in the saloon setting by Jérémy and his sequined hat. The latter then interpreted “Lettre à un cowboy” in duet with Marily.
Krystel then showed off all her charms on “C’est chaud,” before Mitsou ripped through the wall of paper backstage to perform the verse while rapping. A nice surprise appearance.
Sandrine and Éloi were surprising as a duet on “Le yaya”, not hesitating to step out of their comfort zone. In the role of the suave seducer, Éloi was irresistible.
Finally, Sarah-Maude and Julien sang "Dis-moi", quickly joined by all the Academicians.
Mitsou signed the most flamboyant and successful number of this season. An extraordinary medley.
Special request
The Academicians paid a special tribute to Dominique Lecompte, a passionate teacher who founded a school of rock. "I did it to make young people dream, to give them hope and to live with music," he explained, going on stage at the end of the number during which we could hear the song. "Corinne", from the Three Accords.
Still little known in Quebec, the Frenchwoman Yseult made her unique universe known through two songs. She performed "Bad Boy", with Marily, and the wonderful song "Corps", in which Sarah-Maude and Audrey-Louise particularly shone. A smooth performance.
Verdict
Before giving the result of the votes, the Academicians performed an excerpt from “Give Peace a Chance” in support of the Ukrainian people.
Olivier Bergeron was finally the choice of the public. “We are judges, we accompany them every week, but we also love them, and it tears us up to see them leave,” said Gregory Charles, before announcing that the teachers had decided to keep Édouard.
Eloi Cummings, 16, Magdalen Islands
The teachers have repeatedly asked Éloi to be more flexible when he sings on stage, to stand less upright and less stuck. This Sunday, he showed that he could let go and act crazy, without his vocal performances suffering. In the number staged by Mitsou, he seemed totally relaxed and filled with self-mockery to play the seducer. Since the beginning of the adventure, Éloi has been quite discreet during the dailies, but each of his appearances during the Variétés shows that he is progressing and improving from week to week. Even if he is still very young, the artist in him is more and more ready to reveal himself.
Yseult, a great discovery
Singer Yseult was in Montreal for the second time since the start of her career. Her number, with only women, was full of tenderness and emotion. She also had a message to deliver to the Academicians, she who made herself known by a program of the same style. "I encourage them to undertake and never give up," she said in an interview. “A program is a springboard, not an end. The hardest, but also the most beautiful, is on the outside, coming out of this adventure”.
Mitsou, the flamboyant
Mitsou ended her singing career several years ago, but she remains a passionate and flamboyant creator. She managed to make us rediscover her songs through the voices of the Academicians by giving them a modern touch that makes us forget that we were already listening to these songs in the 1990s. "We did this number with love, everyone wanted it to succeed”, she analyzed in an interview. “They all wanted to create a magical moment. You could see they were having fun, and that's the freedom I wanted to give them." Mitsou even made a surprise appearance rapping the verse in "C'est Chaud", which was at the time the first female rap in French in Quebec. An incredible flow for an exceptional artist.

This academician steals the show in Mitsou's sensual number at Star Académie
An exploded number during which a candidate stands out.
We were promised that the number of the artistic director for a day, Mitsou, would splash. We weren't lied to!
Mitsou put all the gum this Sunday with a completely exploded number which notably featured drag queens.
She went to seek the sensuality of the academicians by making them waddle lasciviously on stage.
Éloi definitely stole the show when he gave 100% and showed a lasciviousness that we had never seen in him.
Dressed in white pants, a black t-shirt and a cowboy hat, he performed “Le Yaya” with amazing confidence. Slightly confused in the steps at the beginning, he recovered by swaying like no one.

If some people were shocked by the number, most Star Académie fans also congratulated Mitsou who knew how to put on a daring show, which we are not used to seeing in this type of show.

YEAH! Congratulations to the whole team! A feat!”

‘Beauty is in the eye of the beholder’ is the expression that comes to mind, but, to me, the true star of this number was Audrey-Louise, who, as noted last week, many think will ultimately win the contest.

The evening started as always with the theme song Changez le monde. This time, we felt the complicity between the academicians who put in place their plan, as the teachers keep telling them. The glances are less and less elusive and the diction is more and more clear.
The guys from Simple Plan then landed on the vast stage of the Mels studio. A band of this magnitude moves more energy in a festival - like the Vans Warped Tour - than on a big stage like Star Académie where many academics seemed lost. One thing is for sure, we were bored to see Pierre Bouvier jumping like 20 years ago, when the band was more into pop-punk than pop melodies.
Even if this fresh wind from the Montreal band allowed us to hear a musical genre that is very rarely put forward during prime time, several academics were not favored by this style. Audrey-Louise, Krsytel and Mathieu were the only ones who were comfortable moving on the guitars and drums of the band. And as always, Julien brings his soul with him everywhere, up to the pop-punk of the ballad Perfect, and it works every time.
One of the most successful acts of the evening was undoubtedly the one directed by Mitsou. The first guest artistic director of the season, she signed a colorful and bright number. Drag queens and glitter made up this flamboyant number in the image of this Quebec pop icon.
Audrey-Louise who wants to break her image of cute girl played the game well in Bye bye mon cowboy alongside a rather discreet Jeremy. If Eloi's performance did not go unnoticed with Le yaya, it is especially the voices of Julien and Sarah-Maude and their interpretation of Dis-moi dis-moi that stole the show in this number.
The French singer Yseult concluded this Variété where diversity was in the spotlight. In a very (too) short number, we were lulled into a deep and poetic universe. The female voices were all in the spotlight. Like Marc Dupré, Quebec fell in love with Yseult.
Mathieu leaves
The three candidates in danger, Édouard, Mathieu and Olivier, received the support of Roxane Bruneau. If this moment is usually reserved for comedians, it is without a doubt the moment where we laughed the most since the beginning of the season.
For his endangerment, Édouard did himself a favor; that of being in tune with his heart and his head. By giving access to his intimacy with his interpretation of High Hopes, the public was finally able to discover a little more of his great sensitivity. The faculty decided to protect him.
Mathieu relied on his great talent for interpretation with the piece Je suis venu te dire que je m'en vais. A real therapy for him, he left his anxiety aside for the duration of his performance. He left the academy with his head held high, but above all with a smile that never left him on Sunday night.
Finally, Olivier chose À hauteur d'homme, a song that he could have written this week, so much it sticks to his skin. Visibly nervous, he tried to be one with his body, his head and his heart. And you could feel it. Not surprisingly, he touched the public who decided to protect him, at the end of an evening of votes.
Special request
The second special request of the Star Académie season was offered to Dominique Lecompte, a high school science teacher. Believing he had obtained a ticket to attend the Variété, host Marc Dupré surprised him by announcing that they wanted to pay tribute to him. Students, colleagues and family wanted to highlight the way he passed on his passion for music to his students with the song Corrine from Les Trois Accords. However, the tribute was more interesting than the number itself.
Next Sunday, Angèle, Ingrid St-Pierre and La Chicane will be among the guest artists. A tribute to Renée Martel is also being prepared with Isabelle Boulay among others.

The comment about Audrey-Louise trying to break the perception of her being ‘cute’ is in reference to a criticism Lara made of her in those terms last week on her Monday Daily show. As noted in an article at (https://www.awanireview.com/star-academie-rating-the-audience-doesnt-agree-with-lara-fabian-this-time/), the viewing audience did not agree with Lara.
Concerning the competition, Olivier was much better than he has been in the past, but he still seems quite limited. The above article seems to feel the audience voted for him out due to his sensitivity. Once that decision was made, Edouard was the obvious choice for the judges.

She leads her small boat with her family in the middle of wide open spaces and has never stopped her singing career. Moreover, she even agreed to take charge of the new edition of the Star Académie program .
In France, this program is no longer broadcast. Instead, every Saturday evening, viewers watch The Voice on M6 . But, we still remember the very first seasons. Indeed, Jenifer is the first candidate to win the singing competition 20 years ago now. Corsica will be followed by Brittany a year later. So, if you are a fan of this competition, you can always turn to Quebec programs for entertainment. In addition, we know that Patrick Bruel flew to participate in the show as a guest!
Lara Fabian: she adapts to her life in Quebec
In any case, Lara Fabian was determined and ready to join her colleagues for the new episode of Star Académie, but the climate decided otherwise. Indeed, she says on her Instagram account that she is stuck at home. Winter seems endless in Quebec and populations must continue to adapt to snowstorms and the damage that this can cause.
"I couldn't leave the house this morning because of the weather conditions, I'm live from the MELS [the broadcasting studio of the program] thanks to 24/7 ," she explained in the video. . "And are you also blocked because of the weather? # snowstorm", asks Lara Fabian to her followers. In France, the situation is quite different. Some people are also blocked. FOURTEENTH STORY: LIFE GOES ON
Lou baker
In all the intense things that happen in my life, there is above all the joy of continuing to live with my little girl on a daily basis, whenever life gives me a break.
Early on, Lou showed a deep interest in baking and cake design. She has shown me how wrong my dessert beliefs are and how tender the mistakes are.
Up until then, I had believed that baking was impossible unless you were a great mathematician, a chemist whose precision could not suffer any fantasy.
My little Loulou taught me that fantasy is the first ingredient to be put on the counter and that patience must be used to make the dessert a success.
She also showed me that, sometimes, what is not perfect or aesthetically impeccable can be deliciously good.
And that with only three ingredients, one can do wonders.
Masayo her guide
Lou started to use her imagination at the age of two, supported by my Japanese friend Masayo.
My friend allowed her to experience everything, even if it meant bringing in a special cleaning crew when they were both done with their "baking labs".
I remember one moment when my mother's heart gave way as she watched her burn herself on the edge of a hot pan in which she was sautéing pancakes...
I remember that Masayo hastened to reassure me and to put a little balm on her to heal the little wound.
Masayo was right, we must trust Lou to be able to blossom.
Develop her talent.
Every weekend that my friend was home, they were doing something amazing. And we enjoyed these wonders together.
By the age of nine, Lou was able to make tiered cakes with handmade whipped cream and fresh fruit, macaroons of all kinds, crepes as soft as puffs, merinques as light as clouds, sables and apple crumbles.
No more gluten
At the time of writing, she is thirteen years old, and it is with firm eyes that she invests the kitchen and realizes all that, but without gluten!
Because her mother has the most absurd form of intolerance for an Italian of origin: gluten intolerance!
I must admit that when I found out in the most unlikely way that I had this condition, it took me a few hours, sitting in silence, to measure the impact that this news would have in my life.
But most of all to realize the resilience I would need to succeed in this challenge of adaptation.
This discovery, which was disturbing to say the least, came at a time when I was struggling with a multitude of recurring inflammatory problems, which until then had been impossible to resolve.
Let's move on...
The real diagnosis was made in a much more original way.
During a fall on the stairs at home, I bent the cornea of my right eye, my eye swelled up like a bun and my eyelid looked like it had been made up by a make-up artist resurrected from the 1960s. In the emergency room, I was seen not by an ophthalmologist, but by a gastroenterologist, who was on duty that day.
He asked me a multitude of questions while waiting for the one who would take care of my eye.
In light of the answers I gave him, which were more general about my health, he simply said this: "Ah, in addition to the problem you have with your eye, it is obvious that you are gluten intolerant. Maybe even allergic."
You can imagine my face. The day before, I had just swallowed a big plate of pasta...
And in the morning, if I had fallen down the stairs, it was because I was protecting a freshly baked bread and a jar of homemade jam. I would go upstairs with a tray to the terrace to have my breakfast in the sun.
It was out of the question for me to let these precious victuals escape. So, rather than letting them go, I preferred, in an ancestral reflex, to carry them to my chest as one protects a newborn child and to tip over face first on the top of the steps ....
Beyond the pain which allowed me to deploy an immense creativity with all the names of birds and the sacred ones which I know in Quebecois, I was able, while passing in front of the mirror of the bathroom, to contemplate the disaster. I really have an ugly head.
But then again, what characterizes me in a cellular way is the fact that I always end up seeing the glass half full.
If I hadn't fallen down that staircase, I wouldn't have realized what my underlying problem was, and that wonderful Dr. De Sola wouldn't have seen my concern. I would not have been able to deal with the inflammatory disorders that were really weighing on my life.
From that point on, a new culinary adventure began for me.
I did the most incredible research, found the most wonderful products and adapted all my Italian recipes to this new gluten free reality.
I can tell you that I am the champion of those dishes that look perfect and that would delight the most fastidious Italian grandmother in terms of flour, wheat and tradition.
Not to mention the fact that one of the hardest things to mourn is obviously the pastry.
But even here, I have been infinitely lucky to have given birth to a little gem, whose passion is to develop all the sweet things I can enjoy gluten-free and safe.
Tiramisu with gluten free spoon cookies.
Strawberry Pavlova with whipped cream.
Genoise like a cloud with rice flour, topped with whipped cream and fresh fruit.
Cupcakes made with cocoa, almond flour and quinoa, topped with a dome of vanilla cream.
No-bake cheesecake with a crust made with gluten-free Italian cookies...or gluten-free Oreo!
A DREAM.

What would appear to be a much less dramatic book entry, compared to some of the previous installments, for Lara finding out she had to be “gluten-free” was probably equally as dramatic. Lara suggests that the gluten-free products can be equally delicious, but this really requires a big search. It is still a very big sacrifice.

Krystel then showed off all her charms on “C’est chaud,” before Mitsou ripped through the wall of paper backstage to perform the verse while rapping. A nice surprise appearance.
Sandrine and Éloi were surprising as a duet on “Le yaya”, not hesitating to step out of their comfort zone. In the role of the suave seducer, Éloi was irresistible.
Finally, Sarah-Maude and Julien sang "Dis-moi", quickly joined by all the Academicians.
Mitsou signed the most flamboyant and successful number of this season. An extraordinary medley.
Special request
The Academicians paid a special tribute to Dominique Lecompte, a passionate teacher who founded a school of rock. "I did it to make young people dream, to give them hope and to live with music," he explained, going on stage at the end of the number during which we could hear the song. "Corinne", from the Three Accords.
Still little known in Quebec, the Frenchwoman Yseult made her unique universe known through two songs. She performed "Bad Boy", with Marily, and the wonderful song "Corps", in which Sarah-Maude and Audrey-Louise particularly shone. A smooth performance.
Verdict
Before giving the result of the votes, the Academicians performed an excerpt from “Give Peace a Chance” in support of the Ukrainian people.
Olivier Bergeron was finally the choice of the public. “We are judges, we accompany them every week, but we also love them, and it tears us up to see them leave,” said Gregory Charles, before announcing that the teachers had decided to keep Édouard.
Eloi Cummings, 16, Magdalen Islands
The teachers have repeatedly asked Éloi to be more flexible when he sings on stage, to stand less upright and less stuck. This Sunday, he showed that he could let go and act crazy, without his vocal performances suffering. In the number staged by Mitsou, he seemed totally relaxed and filled with self-mockery to play the seducer. Since the beginning of the adventure, Éloi has been quite discreet during the dailies, but each of his appearances during the Variétés shows that he is progressing and improving from week to week. Even if he is still very young, the artist in him is more and more ready to reveal himself.
Yseult, a great discovery
Singer Yseult was in Montreal for the second time since the start of her career. Her number, with only women, was full of tenderness and emotion. She also had a message to deliver to the Academicians, she who made herself known by a program of the same style. "I encourage them to undertake and never give up," she said in an interview. “A program is a springboard, not an end. The hardest, but also the most beautiful, is on the outside, coming out of this adventure”.
Mitsou, the flamboyant
Mitsou ended her singing career several years ago, but she remains a passionate and flamboyant creator. She managed to make us rediscover her songs through the voices of the Academicians by giving them a modern touch that makes us forget that we were already listening to these songs in the 1990s. "We did this number with love, everyone wanted it to succeed”, she analyzed in an interview. “They all wanted to create a magical moment. You could see they were having fun, and that's the freedom I wanted to give them." An exploded number during which a candidate stands out.
We were promised that the number of the artistic director for a day, Mitsou, would splash. We weren't lied to!
Mitsou put all the gum this Sunday with a completely exploded number which notably featured drag queens.
She went to seek the sensuality of the academicians by making them waddle lasciviously on stage.
Éloi definitely stole the show when he gave 100% and showed a lasciviousness that we had never seen in him.
Dressed in white pants, a black t-shirt and a cowboy hat, he performed “Le Yaya” with amazing confidence. Slightly confused in the steps at the beginning, he recovered by swaying like no one.

If some people were shocked by the number, most Star Académie fans also congratulated Mitsou who knew how to put on a daring show, which we are not used to seeing in this type of show.

‘Beauty is in the eye of the beholder’ is the expression that comes to mind, but, to me, the true star of this number was Audrey-Louise, who, as noted last week, many think will ultimately win the contest.

The evening started as always with the theme song Changez le monde. This time, we felt the complicity between the academicians who put in place their plan, as the teachers keep telling them. The glances are less and less elusive and the diction is more and more clear.
The guys from Simple Plan then landed on the vast stage of the Mels studio. A band of this magnitude moves more energy in a festival - like the Vans Warped Tour - than on a big stage like Star Académie where many academics seemed lost. One thing is for sure, we were bored to see Pierre Bouvier jumping like 20 years ago, when the band was more into pop-punk than pop melodies.
Even if this fresh wind from the Montreal band allowed us to hear a musical genre that is very rarely put forward during prime time, several academics were not favored by this style. Audrey-Louise, Krsytel and Mathieu were the only ones who were comfortable moving on the guitars and drums of the band. And as always, Julien brings his soul with him everywhere, up to the pop-punk of the ballad Perfect, and it works every time.
One of the most successful acts of the evening was undoubtedly the one directed by Mitsou. The first guest artistic director of the season, she signed a colorful and bright number. Drag queens and glitter made up this flamboyant number in the image of this Quebec pop icon.
Audrey-Louise who wants to break her image of cute girl played the game well in Bye bye mon cowboy alongside a rather discreet Jeremy. If Eloi's performance did not go unnoticed with Le yaya, it is especially the voices of Julien and Sarah-Maude and their interpretation of Dis-moi dis-moi that stole the show in this number.
The French singer Yseult concluded this Variété where diversity was in the spotlight. In a very (too) short number, we were lulled into a deep and poetic universe. The female voices were all in the spotlight. Like Marc Dupré, Quebec fell in love with Yseult.
Mathieu leaves
The three candidates in danger, Édouard, Mathieu and Olivier, received the support of Roxane Bruneau. If this moment is usually reserved for comedians, it is without a doubt the moment where we laughed the most since the beginning of the season.
For his endangerment, Édouard did himself a favor; that of being in tune with his heart and his head. By giving access to his intimacy with his interpretation of High Hopes, the public was finally able to discover a little more of his great sensitivity. The faculty decided to protect him.
Mathieu relied on his great talent for interpretation with the piece Je suis venu te dire que je m'en vais. A real therapy for him, he left his anxiety aside for the duration of his performance. He left the academy with his head held high, but above all with a smile that never left him on Sunday night.
Finally, Olivier chose À hauteur d'homme, a song that he could have written this week, so much it sticks to his skin. Visibly nervous, he tried to be one with his body, his head and his heart. And you could feel it. Not surprisingly, he touched the public who decided to protect him, at the end of an evening of votes.

The second special request of the Star Académie season was offered to Dominique Lecompte, a high school science teacher. Believing he had obtained a ticket to attend the Variété, host Marc Dupré surprised him by announcing that they wanted to pay tribute to him. Students, colleagues and family wanted to highlight the way he passed on his passion for music to his students with the song Corrine from Les Trois Accords. However, the tribute was more interesting than the number itself.
Next Sunday, Angèle, Ingrid St-Pierre and La Chicane will be among the guest artists. A tribute to Renée Martel is also being prepared with Isabelle Boulay among others.

The comment about Audrey-Louise trying to break the perception of her being ‘cute’ is in reference to a criticism Lara made of her in those terms last week on her Monday Daily show. Concerning the competition, Olivier was much better than he has been in the past, but he still seems quite limited. The above article seems to feel the audience voted for him out due to his sensitivity. Once that decision was made, Edouard was the obvious choice for the judges.

In France, this program is no longer broadcast. Instead, every Saturday evening, viewers watch The Voice on M6 . But, we still remember the very first seasons. Indeed, Jenifer is the first candidate to win the singing competition 20 years ago now. Corsica will be followed by Brittany a year later. So, if you are a fan of this competition, you can always turn to Quebec programs for entertainment. In addition, we know that Patrick Bruel flew to participate in the show as a guest!
Lara Fabian: she adapts to her life in Quebec
In any case, Lara Fabian was determined and ready to join her colleagues for the new episode of Star Académie, but the climate decided otherwise. Indeed, she says on her Instagram account that she is stuck at home. Winter seems endless in Quebec and populations must continue to adapt to snowstorms and the damage that this can cause.

FOURTEENTH STORY: LIFE GOES ON
Lou baker
In all the intense things that happen in my life, there is above all the joy of continuing to live with my little girl on a daily basis, whenever life gives me a break.
Early on, Lou showed a deep interest in baking and cake design. She has shown me how wrong my dessert beliefs are and how tender the mistakes are.
Up until then, I had believed that baking was impossible unless you were a great mathematician, a chemist whose precision could not suffer any fantasy.
My little Loulou taught me that fantasy is the first ingredient to be put on the counter and that patience must be used to make the dessert a success.
She also showed me that, sometimes, what is not perfect or aesthetically impeccable can be deliciously good.
And that with only three ingredients, one can do wonders.
Masayo her guide
Lou started to use her imagination at the age of two, supported by my Japanese friend Masayo.
My friend allowed her to experience everything, even if it meant bringing in a special cleaning crew when they were both done with their "baking labs".
I remember one moment when my mother's heart gave way as she watched her burn herself on the edge of a hot pan in which she was sautéing pancakes...
I remember that Masayo hastened to reassure me and to put a little balm on her to heal the little wound.
Masayo was right, we must trust Lou to be able to blossom.
Develop her talent.
Every weekend that my friend was home, they were doing something amazing. And we enjoyed these wonders together.
By the age of nine, Lou was able to make tiered cakes with handmade whipped cream and fresh fruit, macaroons of all kinds, crepes as soft as puffs, merinques as light as clouds, sables and apple crumbles.
No more gluten
At the time of writing, she is thirteen years old, and it is with firm eyes that she invests the kitchen and realizes all that, but without gluten!
Because her mother has the most absurd form of intolerance for an Italian of origin: gluten intolerance!
I must admit that when I found out in the most unlikely way that I had this condition, it took me a few hours, sitting in silence, to measure the impact that this news would have in my life.
But most of all to realize the resilience I would need to succeed in this challenge of adaptation.
This discovery, which was disturbing to say the least, came at a time when I was struggling with a multitude of recurring inflammatory problems, which until then had been impossible to resolve.
Let's move on...
The real diagnosis was made in a much more original way.
During a fall on the stairs at home, I bent the cornea of my right eye, my eye swelled up like a bun and my eyelid looked like it had been made up by a make-up artist resurrected from the 1960s. In the emergency room, I was seen not by an ophthalmologist, but by a gastroenterologist, who was on duty that day.
He asked me a multitude of questions while waiting for the one who would take care of my eye.
In light of the answers I gave him, which were more general about my health, he simply said this: "Ah, in addition to the problem you have with your eye, it is obvious that you are gluten intolerant. Maybe even allergic."
You can imagine my face. The day before, I had just swallowed a big plate of pasta...
And in the morning, if I had fallen down the stairs, it was because I was protecting a freshly baked bread and a jar of homemade jam. I would go upstairs with a tray to the terrace to have my breakfast in the sun.
It was out of the question for me to let these precious victuals escape. So, rather than letting them go, I preferred, in an ancestral reflex, to carry them to my chest as one protects a newborn child and to tip over face first on the top of the steps ....
Beyond the pain which allowed me to deploy an immense creativity with all the names of birds and the sacred ones which I know in Quebecois, I was able, while passing in front of the mirror of the bathroom, to contemplate the disaster. I really have an ugly head.
But then again, what characterizes me in a cellular way is the fact that I always end up seeing the glass half full.
If I hadn't fallen down that staircase, I wouldn't have realized what my underlying problem was, and that wonderful Dr. De Sola wouldn't have seen my concern. I would not have been able to deal with the inflammatory disorders that were really weighing on my life.
From that point on, a new culinary adventure began for me.
I did the most incredible research, found the most wonderful products and adapted all my Italian recipes to this new gluten free reality.
I can tell you that I am the champion of those dishes that look perfect and that would delight the most fastidious Italian grandmother in terms of flour, wheat and tradition.
Not to mention the fact that one of the hardest things to mourn is obviously the pastry.
But even here, I have been infinitely lucky to have given birth to a little gem, whose passion is to develop all the sweet things I can enjoy gluten-free and safe.
Tiramisu with gluten free spoon cookies.
Strawberry Pavlova with whipped cream.
Genoise like a cloud with rice flour, topped with whipped cream and fresh fruit.
Cupcakes made with cocoa, almond flour and quinoa, topped with a dome of vanilla cream.
No-bake cheesecake with a crust made with gluten-free Italian cookies...or gluten-free Oreo!

What would appear to be a much less dramatic book entry, compared to some of the previous installments, for Lara finding out she had to be “gluten-free” was probably equally as dramatic. Lara suggests that the gluten-free products can be equally delicious, but this really requires a big search. It is still a very big sacrifice.
